Strutting across a fallen log as the sun sets over the Peruvian Amazon, a Hoatzin showcases its beautiful plumage. Consuming mainly plant matter, the Hoatzin has a specialized stomach called a "rumen" where bacterial fermentation takes place - similar to the digestive process found in cows and other bovids. A large crop, used for food storage, displaces breast muscles,
making these birds very poor fliers.
